Ready in under 30 minutes, humble chicken has never becomes a more exciting & flavourful dish!
 

Method

 

  1. Heat oven to 190C/fan 170C/gas 5.

  2. Butter a large baking tin and gently bake the chicken breasts for 20 minutes, turning regularly

  3. In a medium bowl, whisk together olive oil, jam, vinegar & salt

  4. Add peach slices and gently toss to coat with dressing.

  5. Arrange chicken on a large platter.

  6. Evenly spoon peaches and dressing over chicken.

  7. Sprinkle with basil, feta, and walnuts.

  8. Serve with fresh vegetables & pasta shells

  • 2 tablespoons vinegar

  • 1/2 teaspoon salt

  • 3 ripe yellow peaches, peeled and sliced

  • 4 skinned chicken breasts

  • 1/2 cup basil leaves

  • 1/2 cup crumbled feta cheese

  • 1/4 cup glazed walnuts *, chopped
